Good morning!
Well, I FINALLY went to town and did some cooking. Part of the challenge for me right now is my iron is below normal so I'm super tired, my revision recovery overall is slower.
So, this is what I made, and I froze half because I know my taste buds still switch around - hardy har har!!!
Crustless quiche - eggs, bacon, low-fat shredded cheese mix, parmesean, yellow onion, sour cream, salt, pepper, nutmeg.
Then, used the saute pan with all the yummy dripping flavors to make:
NY tenderloin - (a less expensive on sale cut) in rice vinegar asian marinade; pan sauted with canola oil; separate pan made a quick peanut sauce with organic peanutbutter, almond milk, honey, crushed red pepper
Reinvented the boo-boo buffalo chicken drumsticks - same pan - took all the meat off the bone, sliced it to simulate shred style. In the pan added butter, low-sugar bbq sauce and a few shots of Frank's hot sauce. Add the chicken and coated. OMG DELISH!
Turkey taco - same pan again, it's super savory now! Re-added the reserve sauteed onion from the quiche, 1 lb ground turkey, packet of low-sodium taco seasoning mix, few more shots of Frank's sauce. DELISH. When I'm more confident about what I can tolerate, will definitely add veg like red/yellow peppers, spinach. Will eat with more melted cheese, little bit sour cream, guacamole I'll pick up from a good local dive, salsa.
So you know what I'll be eating today! :-) And I usually have one full lo-carb tortilla a day, to get in a small amount of good complex carb and fiber, half at a time.

Bfast- leftover deep fried turkey from a friend..
Lunch, pizza pheasant leftovers (a riff off of Pizza Chicken.. which is chicken bits cooked with Italian spices or leftover chicken bits shredded, laid in a pan, covered in pizza sauce and motz, and baked till gooey.) I cooked the already cooked bird part leftovers in the crockpot with sauce till I could shred it since it would be tough otherwise, and covered it with motz cheese.. yummer.
Dinner- venison bacon mexi-meatloaf.. couple lbs venison, some chopped crispy bacon, jalapenos, onions, shallots, celery (maybe- I need to use it.. I keep buying but never use it), & spices winged in there, made into a loaf with some panko crumbs, milk & egg, glazed with a mix of lo-carb ketsup, cumin, Worcestershire, and hot sauce.. I never make stuff the same twice, I mostly just wing it as I cook..

I like riffing on pizzz/italian too, it's not too hard to get the yummy, gooey, heartwarmer taste without all the pasta carbs. Wow, that venison bacon mexi-meatloaf sounds like da bomb. Must have 500g of protein! :-)
I just finished up my buffalo bbq chicken, and had a bag of cashews while I was out at the DMV, I had also taken a protein shake with me. I think nuts are going to be one of my DS things of excitement - I love cashews, peanuts; genuinely love almonds too, but excited to have the 'fun' nuts back, they'll be great to take as a snack on the go, to movies, etc.

I'm trying to be more active on this board and more proactive in real life with my DS so I thought I would add to today's thread. I love the recipes you all have posted!
Keep in mind I'm 4 years out, in maintenance mode, and am gluten intolerant so I watch my wheat intake instead of my carb intake.
Breakfast:protein shake w half'n'half snack: turkey & swiss sandwich on gf bread, 1/4 of an apple lunch: 4oz chicken in basil- Havarti cream sauce snack: 2 tbsp peanut butter snack: 4oz chicken in Caesar salad, 1oz cheese, 6 rice crackers Cooking for dinner: Ooey, gooey Italian pepperoni bake w/ cheese & sauce

Hi Jessica, hooray, glad to see you post! It's great I think to have a mix of newbies, early out, longer time out. All recipes, suggestions can be tailored for where any of us are at. Thanks for the heads up about your gluten allergy.
Basil havarti cream sauce, wow, sounds like an alfredo with a twist, yum.
Ooey gooey Italian pepperoni bake, how do you make yours?

Dinner tonight is coconut curry shrimp and vegetables, coconut ginger rice, Marinated cucumber salad. I guess I better get busy in the kitchen...

Today I made a pan of roasted veggies (sweet potato, carrots, beets, acorn squash and onions, drizzled in olive oil, dabs of butter on top, sprinkled with pepper and sea salt). Also cooked sprouted lentils and roasted quinoa. That's my dinner tonight.
For lunch I had greek yogurt with raw sunflower seeds and a few bites of sweet potato.
Breakfast was the usual - protein coffee.

Gail -that sounds really good, love coconut with seafood and rice like that. I so hope my taste for fish comes back. And I miss rice just a lil bit.
LouLou- that meal is one of my all time favorites, roasted vegetables, sweet potato and quinoa. By chance are you a vegetarian?
Annaleigh- that burger is bad to the bone :-)
I finished up my bbq buffalo chicken, and a small serving of the turkey taco meat, added low-fat shredded cheese, ate it with sour cream, avocado I mashed myself and salsa. Just had a protein bar, and will have a protein shake before I go to bed, can't eat any more food today.
