The amounts may vary but I don't think 80-100 gms daily is too much.
You don't need to, and shouldn't, take the fat at teh same time as your ADEK but your body needs a minimum amount of fat to work correctly.
The process of absorbing ADEK vitamins requires that your body have some fat available to it. Again,not at the same time as you are taking the vitamins but through the course of a day. As you absorb the fat (the 20% you do absorb) it gets used for a variety of things.

Scott,
It doesn't sound so bad for a "maintenance" meal plan. I think you are right to be concerned depending on what you fill the extra space with. I just find that carbs of all types lead me to be more hungry than I usually am and for whatever reason they seem to clear out of my stomach quicker allowing me to eat even more if I wanted to. Maybe some of it is the grade of the meat like Sharyl mentioned.
I was pretty horrified when I found I could eat a boston market half chicken meal at one sitting. I resolved that for myself by keeping my portions of the sides small.
You might try the eating less but more often approach. It looks like you are doing a traditional Breakfast, Lunch, dinner, late snack. You might add in light snacks in between breakfast and lunch, then lunch and dinner. It might tone down the hunger and consequently the amounts you eat at a meal.

I eat two breakfasts pretty much everyday and snack on protein bars, nuts e5c....but this week we were on the road unexpectedly so not as much. like you I also try to take it easy on the sides. Face I am not worried about where I just find it interesting how much I can eat now versus where I was a few months ago. Thanks
