;D HI guys, so today in our house I am munching on:
Coronation chicken - had leftover rotisserie chicken, mixed it with mayo, sour cream, curry powder, salt & pepper and spicy mango chutney, left it in fridge overnight. Makes the best sweet spicy chicken salad ever! Its a Uk thing that orginated for the queens coronation - it was the de rigeur thing to put in sandwhiches that year apparently lol I just eat it with a spoon~!!
Tonight we are having low carb tortillas with tyson precooked fajita chicken strips (On special at walmrt $2.50 a bag), caramelised onions, mushrooms and a ton of pepper jack cheese, sour cream and guac!! Oh yeh!
I may squeeze in a bowl of leftover indian butter chicken from last nighst dinner as a snack too!! LOve my DS!!

I have a 5 pound pork shoulder in the crock pot. At 4PM I'll pull it apart and douse it with vinegar and spices for North Carolina BBQ.
Currently I'm munching on NutThins (pecan flavor) and spiced cream cheese while watching Capt America. lol --gina

It is just noon here and I have been trying to think of what to have for dinner so I can do a market run. Maybe wrap it yourself burritos. (I have a guest who's a picky eater and that way she can put what she likes in her wrap) I will forgo the tortilla. Or--hot and sour chicken soup-loaded with chicken with stir fried beef broccoli.

Had costco pulled pork for lunch..yumm. Then for dinner I'm making Swedish meatballs with rice, and probably salad.

Making a rotisserie chicken tonight if it's thawed enough. Not sure what will go with it yet.

I went to Sam's Club this afternoon and was stuffed by the time I left! Today they had free samples of two different Protein Shakes, three flavors of protein bars, some sort of egg bake/quiche thing and cranberry juice. Everything was pretty DS friendly today. Yay! For free food! ;D

For lunch we were out today, went to a little Dominican dive...I had hen soup, oxtail with rice and beans.
For dinner I'm making steamed sea bass with ginger and scallion, small potatoes, zucchini, and a salad.

I had lamb remnants for brekkie, then some cheese, then some steamed shrimp with cocktail sauce, a bit of butter with popcorn LOL during the movie (rented Cowboys & Aliens), and am considering some ham & eggs. Or maybe I'll stir up that pimento cheese.

brunch was ham with some left over cranberries
I shopped at Costco this afternoon so had several samples as snacks
dinner was 8 oz strip loin, with mashed potatoes, mushrooms and caesar salad. For desert, spice cake with cream cheese icing and a glass of milk

Breakfast 2 egg omelet with 2 slices of American cheese. Greek yogurt with stiva and heavy whipping cream and homemade granola in it. lunch bean layered dip with cream cheese mixed with taco season. Tomatoes, cheese, green onions, lettuce. Dipped w/carrots and celery. Hand-full of peanuts and dark chocolates. dinner, 1/2 cup of chili with 3oz. hamburger patty. One Sm. apple and orange cut up in small pieces.

Chicken and dumplings, light on the dumplings heavy on the chicken.
Here lately I seem to be eating a whole rotisserie chicken by myself, in one day not one sitting, but my protein levels were normal in November so go figure way my body is craving chicken, I just run with it.

My neice made me a kick ass grilled cheese sami. She said the trick was to HEAVILY butter both sides of each piece of bread- then layer w/ tillamook extra sharp cheddar cheese. Sweet heaven. Oh yes- used cybros 7 grain bread. crunchy and buttery.

Yorkie, I make something very similar to that Coronation chicken. I kind of made it up and never knew it had a real name We roasted a turkey yesterday, just because I felt like it. Tonight I had some left over turkey and left over mashed potatoes. I formed the mashed potatoes into patties and fried them in butter.

My husband got me a deep fryer (woo!) so I made fishsticks tonight. From scratch! So proud of myself. I also fried up some sweet potato fries for the hubby and the tiny tyrant.

We had Paella from Costco. It has shrimp, scallops, fish, chicken, sausage, yellow rice, peas, spices. I took all of the good stuff and gave my family mostly rice! The DS gave me an excuse to be greedy!

Had a busy cooking day. for lunch we had EN's hunk o critter - I started the crock last night before bed, so good!! Then my hubby made a rotisserie chicken, was to frozen yesterday to cook. That turned out really good. And now I just finished baking some of those flourless PB cookies from the recipies page. Can't wait for them to cool enough so I can eat them.
