I really liked the thread Yorkie started elsewhere for DSers to list what they were eating. It gave me lots of good ideas and kept me out of a food rut.
So, Yorkie Girl, woudl you be willing to start it up again over here? Maybe a daily one again?
Tonight I'm thinking of Monte Cristos made with CarbQuick. Carbquik Recipe: Monte Cristo
Servings: 6 Net Carbs Per Serving: 2g Total Preparation Time: 30 minutes
Ingredients:
2 cups Carbquik 3/4 cup half and half 1 whole egg 6 ounces Swiss cheese, thinly sliced 6 ounces Deli Ham, thinly sliced 6 ounces Deli Turkey, thinly sliced 1/3 cup strawberry spreadable fruit, sugar free Low Carb
Instructions:
-Heat oven to 400ºF. Lightly grease square baking dish, 8x8x2 inches, or spray with cooking spray. Stir carbquik, half and half and egg in medium bowl until blended.
-Spread half of the dough in bottom of baking dish. top with half each of the cheese, ham and turkey. Spread fruit spread over turkey to within 1/2 inch sides of dish.
-Top with remaining ham, turkey and cheese. Spread remaining dough over cheese to sides of dish.
-Bake uncovered about 30 minutes or until golden brown. Let stand 5 minutes before serving. Serve Warm.
I'm going to tweak it to leave out the fruit spread and instead dip the warm sandwich in low carb, sugar free syrup. Nom.

No problem, will do!! its done for today and i'll start the thread tomorrow!! Tonight, we're having indian butter chicken made with heavy cream, butter, coconut milk and rice. I will just have a couple of spoons of rice as it doesnt sit well with me. I sauteed extra onions and mushrooms as we are having low carb chicken fajita quesadillas for dinner tomorrow night with some of those pre cooked fajita chicken strips by Tyson. This will make dinner super easy, just add guac, salsa and sour cream yorkie xx

I am making a hearty lentil soup from the left over New year's ham. (There's lot of meat) I'll serve it with a dollop of sour cream on top.

Tonight, we're having indian butter chicken made with heavy cream, butter, coconut milk and rice. See, that's what I'm talking about. *WANT* I love butter chicken but have never made it for myself. Can you make it in a small crockpot, do you think? I'm single so I usually make partial batches of recipes and often use my crockpot or precooked rotisserie chicken.

Costco sells a delicious butter chicken. It has a pretty long refrigerator life until the seal is broken. I save it for a day when I just don't have any time to cook. I always prefer to cook things myself so will have to look up the directions. Last night we made mulligatawny soup with extra chicken. Love coconut milk recipes especially now that the saturated fats don't stick to me!

I have been making a batch of green curry at least once a week the past couple of months and not giving a whit about the calories or fat. Pre-DS, it would have shot my daily calories into the red zone! Are you going to be at the Rabkin meeting on the 11th?

This week I made a recipe from a new crock book from Bed/Bath/Beyond I found while X-mas shopping. There are many interesting meat and poultry recipes. Nice book, lots of ideas, regrettably no pictures.
Toss all the following into the crock, cook for hours. If using cooked chicken, will be ready sooner. Add chicken last, after combining liquids. I filled a large crock, cooked for at least 4 hrs, may have been ready sooner but I was out. Everyone loved it!! I reused the sauce in the crock the next day to make more raw chicken wings, they were so nice and soft, easy to eat just like the cooked chicken and raw parts. My family added linguini in their wide soup plates, doused with the rich creamy sauce and chicken. Hot French crusty baguette for dipping would be heaven, in another life!!!!! YUM
Pre sauté 1 large onion- slices cut in 1/4's, use butter and olive oil
whole bottle of white wine
1 can family size low fat, or regular cream of mushroom soup
24 oz low fat or regular Quark ( like sour cream, not as sour, Sams has it)
2 jars Alfredo sauce
2 jars sliced mushrooms with liquid.
1 Roasted pre cooked Roasted chicken- cut into parts, skin on
If using raw chicken w/skin, pre brown in olive oil and butter. Add salt, pepper and other chicken seasonings you usually like. Once browned on all sides add to crock, won't be cooked all the way through. Crock will continue cooking raw chicken. Stir from time to time, skim off collected fat.

We have left over pork tenderloin that I cut up and I am making pork stroganoff with fresh mushrooms sour cream and a little mashed potatoes and asparagus.

Leftovers. In the fridge we have: ham, chicken strips (took 2 bites last night and said yuck....can't eat this), cooked hamburgers, piece of cooked fish. Should be able to pull it all together.

I made the most amazing baked egg. The recipe is for a casserole with a dozen eggs but I've been just making one ramekin at a time and baking it in my toaster oven. Yummmm if you like eggs, cheese, & Canadian bacon. Here's the recipe:
Brunch Eggs 12 slices Canadian bacon 12 oz shredded Swiss cheese 12 large eggs 1 c. whipping cream ½ t. salt ½ t. pepper 1/3 c. Parmesan cheese 1 t. paprika ¼ c. chopped fresh parsley Place bacon in a single layer in a lightly greased 13 x 9 inch baking dish. Place about a 12th of the Swiss cheese on each piece of bacon making a little “birds nest” to hold the egg. Place an egg in each nest of cheese. Pour cream over eggs, sprinkle with salt and pepper. Bake at 425 for 10 minutes. Sprinkle with Parmesan cheese and paprika. Bake 8-10 minutes or until set. Remove from oven and sprinkle with parsley. Let stand 1 minute before serving. May serve on English muffins.

We had Sausage and Peppers. Italian sausage, peppers, onions, garlic, mushrooms, in a tomato sauce with red wine. Yummmm..I serve it with angel hair pasta and crusty bread and have a few bites of each.

Tonight I made EN's hunk o meat in the crockpot. I also made creamed spinach and mashed potatoes. My kids loved this meal and since I mostly had chicken and onions, it was perfect for me .

I really want to try this without the jelly and dip it in ranch or pizza sauce. Tonight was the Burger King fund-raising night for the PTA, so I ordered a Whopper and pulled off the bun. Every since I joined the gym and workout everyday after work, I really don't feel like cooking much - not getting home until 6 now. I need some more quick and easy recipes that I can get my kids to help with so we don't eat out so much.

I feel like a nasty, degenerate old man, salivating while reading Penthouse Magazine Forum. I swear my pupils are dailated and my heartrate is elevated! Everything sounds so delicious!
The thought of being able to eat these recipes in future months will keep me going through the recovery process.
This is one of my favorite posts from the old site. Thanks for bringing it here!
