If it is the mushroom to make your own at home, it takes about 5 tablespoons of sugar per quart to ferment and have good taste. ... that is 60 grams of carbs.

If you let it sit for a bit longer the carbs are less. Plus you drink very little. The sugar isn't to make it taste better it, feeds the mushroom. Kombucha has many health benefits. It's not something you drink because of the way it tastes. It will detox you as well as provide anti biotic effects.
I used to drink it all the time. We grow our own.

Avoid the carbs early out. Don't drink it.

I grew up drinking this b4 it even entered American market as a fad health food item. It has sugar, and to taste better it usually has more sugar, the sugar is not just to feed the fungus- it does alter the taste, it can taste crappy but the fungus will live, sugar matters. You can let it sit longer, you lower but dont remove the carbs either way. You cant make it without sugar. Plus above all else, this is an yeast, Can you eat fresh yeast bread without a problem? I personally do not do so well with fresh yeasty things.

My niece grows it and drinks it so I tried some.
Ummm, unless it gets rid of wrinkles and makes my skin more elastic, I am not drinking it again. Blech!!! LOL

LOL LoL yeah it's not the most pleasant thing in the world. My mom swears by it though and it's something I've drunk for years to help with yeast infections. I also drink water kiefer too (which is AWESOME with ginger and lemon). As for the sugar in it, there really isn't much in it especially if you're drinking it for benefit rather than taste so I'm not concerned about the carbs part (I don't touch carbs normally anyway) but Kumbacha can be hard on your liver because it detoxifies you and that's why I had asked.
