It's a rare cloudy morning here in LA, we're supposed to get some much-needed rain. I'm thrilled to be drinking a mug of coffee :-) I can drink one now and that seems to be enough. I'll have a protein shake in little while. I start every morning with 24 oz bottle of water, one of the good habits I learned after my first surgery.
So, I FINALLY finished that steak I goofed with the peanut sauce, and was able to mask the flavor of the icky marinade. I cut the steak into strips and sauteed it in some canola oil with a few drops of sesame oil; added the peanut sauce, low-sodium soy sauce and a dab of honey and it was delish. I'll finish up the left over carne asada from Superbowl sunday.
I'm going to make parmesean crusted chicken tenders, I'm craving herby-savory, and they will be pan fried in lots of olive oil and butter for extra flavor. I took a field trip to Walmart yesterday and picked up some more turkey kielbasa, shredded cheese and pepperoni. Whey Protein Isolate for half the price in health stores. Also got some Crystal Lite too, peach tea and pink lemonade flavors. I don't love the taste anymore, but it's not terrible, and my tastebuds need something besides water. It will actually taste good with some seltzer water, but I've been avoiding anything carbonated, caffeinated or with salt (like club soda) so that it can count as fluid. One glass is enough, I also don't want to overkill on Splenda.
I'm thinking a lo-carb pizza is on board for today, with the new whole grain wheat bread pocket thins I got - toasted in the pan in olive oil, top with ricotta, pepperoni, mozzarella. 13g of good carb and double that in protein.

Good morning Sharyl. It's early for me to be planning dinner, but a good thing since I need to thaw some meat form the freezer. I am looking for a good beef curry recipe. My new method is to google images to see what looks good before reviewing the recipe. Anyone have a good recipe? The snack monster has been after me for the last few days. Nothing seems to satisfy it. I have been making cheese crisps in the microwave and they do the best job of keeping me on track. I just take a paper plate or sheet of parchment and sprinkle a small handful of finely grated cheese to make a thin layer. It can be seasoned, if you like, with garlic power or anything like that. I like mine plain. Cook until they start to change to a slightly darker color and puff up a little. You have to experiment with different microwaves for the exact time. Mine takes about 50 seconds. Cook until crisp and enjoy. PS Sadly, we just got a sprinkle of rain in the night and it moved on. No rain forecast in sight. My BBQ mojo didn't work so well.

Hi Gail! Aren't those cheese crisps DA BOMB?! Which reminds me I forgot to pick up paper plates or parchment paper, they crisp up better that way then on a regular glass plate. I was thinking...that thinking about my food for the whole day sometimes makes me nuts But I'm trying to ballpark for now so that I have a plan to stick with, with room for fine-tuning since my I seem to be - dare I say - stabilizing a little taste-bud/tolerance wise. I'm actually craving tuna salad as I type this, haven't been able to go near fish of any kind yet. Which, tastes great on those cheese crisps! You know, for authentic beef curry, I think I'd head over to Food Network Chef Aarti Sequeria. She has the show Aarti's Party, she's absolutely adorable and her recipes kick bootay. Hey Guys, sorry been AWOL from this post but had to go to UK unexpectedly and no internet access for 2 weeks. Yesterday we had some chuck roast cooked in bbq sauce with sliced bell peppers, onions etc and I had mine over sauteed zucchini. Had someleftovers of this wrapped up in a low carb wrap with huge dollop of sour cream and shredded cheese for lunch. Tonight we are havin cheese omelettes with fried onions and bell peppers (we bought a ton real cheap at farmers market sunday). Tomorrow the rest of the chuck roast will be going into low carb wraps and in the electric quesdailla maker!! Waste not want not round here these days as the budget is tight lol

The chuck roast and peppers sound great, and always like the additional meals made out of leftovers like wraps and quesedillas. Great!

We are having bacon-wrapped chicken breasts topped off with cheese on the grill tonight. Tomorrow night we are having meatloaf that the hubby cooked today, but waiting to eat 'til tomorrow to give the flavors time to "soak in." You know how good some things taste the next day. ;D

Chicken tender roll-ups, Filling: italian bread crumbs, melted butter, shredded mozzarella. Pound thin, sprinkle filling, roll up, hold together w/ toothpicks. saute in olive oil, microwave a little to be sure center is cooked. Dust with parmesan cheese before serving- 2 roll ups are a good serving size.

Beth - yes, meatloaf, meatballs, chili, sauces, all taste soooo good the next day. Nice that the hubby cooked that up too ;-)
My day did a little change - still haven't made the parmesean chicken tenders; I finished the carne asada; had a Pure Protein Strawberry Shortcake bar (fruit flavor tasted SO good!) and then I had a lo-carb tortilla with organic peanut butter and sugar free strawberry preserves! Totally lost my appetite/interest in food after my big day start.
My breakfast wound up being open faced breakfast sandwich - over-medium eggs with melted cheese, on top of a whole grain bread pocket thin, that had butter and ricotta cheese spread and a sausage link split in half. SO good! 30g of protein. So that's my big carb count for the day, 28g, and that's about as 'high' as it ever goes for now. 120g protein so far.

I made sizzler steaks with grilled yellow & orange peppers. Thinking it's about time to have another one. Sharyl, the chicken tenders sounds so good. Think I'll have to try that out this week.

Meredith - your sizzling steaks are exactly how I like to eat them, I love every pepper BUT green ones,and loved grilled onions too, especially those nice purple ones.

Thanks Sharl for the tip about Aarti Sequeria's recipe site. I have it bookmarked. I ended up going out to an Indian Buffet with my son. I never turn down a request to eat with one of my kids. It is about the only time I get a good conversation with them LOL. Now I will have to use my defrosted beef for something else tomorrow...
