How was everyone's weekend?
Big day for me yesterday, actually was out, just finally able to do that a little more now. I'm not a sports watcher at all, but always like the Superbowl festivity. I didn't bring anything with me because I knew meat and cheese would be easy and I was right. I made 2 stops - first one at an Irish pub with a couple of girlfriends, had ice tea and wings with bleu cheese. Then stopped at a party. I brought mini ricotta spinach crustless quiches and I made a bread pudding out of leftover sweet potato cornbread and gingerbread I had made for when I had people visiting me post-op during the holidays, I popped what was left in the freezer. Party was a carnivore buffet! A make your own burrito bar with grilled carne asada (just steak and cheese for me), peppers 'n onions, hot dogs, cheese. Ate bits of everything, and the only problem is was so good I wished I could eat more, but have great leftovers.
So today will be having leftover wings and carne asada and I'm going to make parmesean crusted chicken tenders and a turkey meatloaf. For the meatloaf, to get that nice meaty home flavor, I use a packet of onion soup mix, half a packet of brown gravy mix, ketchup, egg, worcestershire and 1/4 cup of ground whole grain crackers, 1/4 melted butter. I use the mini bread tins for individual size portions.

Tonight we are going to BBQ. In Northern CA we are having a terrible drought. No rain here in months! Really bad news. I know if I plan to BBQ, it will be like a rain dance and it is sure to rain. Besides, the weather says it might start raining soon so this is our last chance to easily cook on the grill. LOL I am emptying the freezer of some steaks and chicken so we can eat it for tomorrow too. Will add some peppers, sweet onions and egg plant to the grill que as well. I am just beginning to easily tolerate cooked onions and peppers. Small amounts never bothered me, but I love them and over do it.

Barbecue sounds good! I'm thinking of getting a brisket that I can do bbq style. We're in a draught here too in Southern Cali, very cloudy today, they say the rain is coming our way too.
I didn't eat the peppers or onions yesterday, I know the onion even in the tiny amount in the turkey taco salad didn't sit so great; or does spinach, judging from my reaction to the very tiny amount of spinach I had in the little crustless quiches. I guess I'll have to try some other vegetables, see how I do, how long it takes before I can tolerate. I actually miss eating vegetables and salads, but all in good time :-)

I have a new Vita Mix toy, so I'm been blending for a week. I'm on maintenance so I add some frozen fruit to my shakes, I would not do that if I was still wanted to lose more weight.
Today I made a shake with 2 scoops Champion chocolate protein Water / Ice Cream Frozen Raspberries
Yum!
I also made some fresh salsa in the VitaMix, which I will have with broiled chicken and cheese tonight.

I also made some fresh salsa in the VitaMix, which I will have with broiled chicken and cheese tonight. I LOVE my Vitamix! Smoothest. Hummus. Ever. I used to have friends insist I bring it to BBQ's to make frozen drinks. It is a fun toy. They last forever!

I want left overs!!
I'm in a dry spell with food... I can't seem to find anything in the store except deli meat and cheese. It's weird how some days I am so full of ideas and others I'm so BLAH about food. But yours sounds GOOD!!

I missed some good nibbles yesterday, just had a couple meatballs & pork tips.. It seemed everybody was on the same wavelength and brought cookies and desserts, it was like a cookie & brownie competition! I'm not much of a sweets person, however I did take a nibble of a particularly great oatmeal/cherry/apricot/walnut cookie that was fab.. So today in a nod to what I was craving yesterday I stuffed a half a jalapeno pepper with cream cheese and cheddar and broiled it, yum! Still missing wings, but I'll get to that some other day.
Dinner, not cooking.. carryout lamb tikka masala.

Joanne - my friends swear by their Vitamix', they love them. It's on my kitchen wishlist along with a Kitchen Aid mixer. I love smoothies too, so many different kinds but ya, avoiding fruit for now in my shakes since I can knock them back easily, and I do 2 a day so I get 80g of protein right there. Love lamb, tikka masala. Delish.
Jo-stuffing a jalepeno with cream cheese and cheddar, and broiling? YUM. Call me popper! I have no idea if I'll be able to tolerate peppers, I love red and yellow ones; and banana peppers too. There we NO sweets at the party I was at except for the bread pudding dessert I brought! I enjoy sweets, but they were never my downfall, so I can manage, unless there are cookies around, love cookies, all kinds, especially all the Christmas cookies.
Dana - I go through dry spells too, sometimes I get sick of thinking about it so much, because I'm so early still, and just eat plan stuff like deli and cheese, or peanubutter with sugar free fruit spread. For that reason I stocked up a little more on quickie stuff - turkey kielbasa which I'll put in the micro and melt mozzarella, dip in mustard; frozen turkey meatballs and sausage links; pepperoni to make 'pizza', I'll put it on the plate, sprinkle shredded mozarella and parmesean.
I also have my low carb whole grain tortillas, blue corn tortillas and I picked up whole grain fiber bread thins today. That's basically my only 'carb', and I usually have it early in the day before 2p. I like it with my eggs, will make super protein quesedillas, or deli wraps. Sometimes fast, no thinking...good!

So far, I'm not craving anything too much yet, though I've had some bread moments. :-) I think I deserve some kinda STAR for making those mini quiche tartlets with puff pastry and not eating it, I thought I would swoon from the pastry aroma...
