And now, happy weekend! Thought I'd combine for the weekend, since Frankie also posted a kick-a$$ Superbowl menu here.
I'm finishing up the batch cooking I did at the top of the week - crustless bacon/cheese quiche, and I think I have to omit the onion next time, don't think those are sitting well just yet. Steak with peanut sauce, turkey taco salad. I made a batch of almond crusted chicken tenders that are delish. After watching Alex Guernishelli's show this morning, I think the next thing I have to make up is her pork meatballs with marinara.
I'm attempting to go to a party tonight, I'm still in pain, but I really want to go to this birthday party, at least for awhile. It starts early evening so I'll give it a go, it's a potluck. I'm making something from ingredients in my fridge that I haven't tried yet or I know don't agree well, like spinach (haven't tried), full fat cottage cheese and sour cream, makes a really good bake that spreads well on toast points or crackers.
Tomorrow a Superbowl get together - which the theme is, not the game itself but Madonna's half-time show My friend is italian so I know there will be all kinds of food there, including pizza, and she has a killer vegetable garden. Don't know what I'll be able to eat, but I'm sure there will be something. I'll bring a turkey-cheese wrap and to-go protein shake just in case.
I've been snacking on peanuts, cashews, small amts of cheese. I love it.

Right now, I'm happy that I was able to go out to a movie theater and make it through the movie without a bathroom run! I brought the other half of my turkey cheese wrap and a protein bar. Finally saw The Artist and it was fabulous.
The crustless bacon-cheese quiche that I made with 7 eggs made 2 quiches; I'll finish one today.
I have another mistake dish I gotta fix, the steak with peanut sauce. Everything about the way I cooked the meat was wrong. Got a less expensive cut of steak, but the marinade wasn't good and didn't turn out right in the pan. So I'm going to stir fry it today and reinvent.
I took out some chicken to make my own tenders, these I know are a sure thing :-) I use ground almond for a 'breading' and saute in butter and olive oil, eat with ranch dressing. Yum!
Working my way through the turkey taco meat and will probably also make up some chicken wings, snack on cheese.
Speaking of wings...does anyone do Superbowl parties/gatherings?

Hi Girlrocker happy Friday,
Its restaurant week in NY so for lunch I will be having steak! Yum Yum.
Dinner will be blackened grilled salmon and steamed broccoli.
I am hosting a superbowl party and my house and the menu so far:
baked beans macaroni salad jerk wingettes bbq wingettes buffalo wingettes (with blue cheese) roast pernil (my sister is making) tossed salad chips, salad, spinach dip My special chicken ring (great appetizer)
We are still adding on but this is what I have so far.

Sure its a crowd pleaser. 4 pieces Grilled chicken 1 head of broccoli 1/2 red onion 2 red peppers 8oz shredded cheddar cheese mayonnaise In a food processor chop up chicken, broccoli, red onion and pepper. mix in the mayonnaise and cheddar cheese. on a pizza stone take crescent rolls and arrange in a circle, add the mixture onto the crescent rolls and fold over (hence you get the ring). Bake at 375 for 15 min or golden brown. cut into pieces. Makes a great appetizer. Since I am now post-op and don't do a lot of carbs right now, I pick out the mixture.

We're going out for Ethiopian tonight. There are lots of meat and whole grain dishes (lentils, etc.) The bread, ingera, is sort of a sour dough crepe made with an African grain that doesn't give me problems if I don't over do it. You eat family style from a large tray of food so I can pick what I need from the meal.

We have a big Ethiopian community in the Berkeley/Oakland area (near my home) We had very rare beef seasoned with their herbs and butter-cheese, lamb, and chicken stewed with a hard boiled egg. The combination plate includes lots of vegetables as well. I tried to use the injera bread just to get the food to my mouth and not eat it until it became too messy. I ended up eating too much of the "bread" and feel like I am way over full. I will know soon whether it is going to bother me-hope not.

I started an allergy elimination diet yesterday. Chicken breast steamed and baby fresh green beans for 3 days, then add one single food, watch for allergy symptoms , journal the results. Had the 65 poke allergy test. I found out I am allergic to eggs and shrimp, and a few other things!!!

The allergy is a new development then, is it at all related to surgery? Are you bummed about anything you're now allergic to that you'll miss? Update with how you're doing. Gail - the meal sounds delicious, and I love Berkley. Hopefully you have no 'issues'. I can barely use chopsticks, I'm always having to ask for forks.

Had my protein shake this morning, walked the dog, now having breakfast - last of crustless quiche, leftover bacon with a blue corn tortilla. Love these, only 13g carb. I usually have my 'starchy-fiber' complex carbs earlier in the day, not after mid afternoon. Right now to maximize my early losing window, very rarely more than 20-30g tops. My protein total so far is 65g and it's not even 10am. Word!

Hi Sharyl, Already in 2 1/2 days of chicken breast and green beans, lost 3 lbs, broke my stall!! I can't eat very much dry skinless breast( 1 fresh chicken breast tenderloin per meal). The 1/2 c green beans are easy to eat, and have replaced my need for fiber gummies. The dark circles from allergies under my eyes have lightened. Sent a detailed symptom e-mail to my surgeons group of docs. Been months of the same issues, everyone pointed a finger at the Adderall, but I didn't have any mouth pain before surgery.One pre mixed protein drink stripped the skin off the inside of my cheeks, drinking one bottle. They are having my major blood draw done a few weeks early, this monday to see if they can find any clues. My stomach has been aching after eating any solid foods, which is why I have been having more of a liquid diet. Bet its as irritated as my mouth.
I have had dry mouth, no pain, since before surgery taking Adderall for ADHD. Post surgery in the hospital I could hardly talk from being so dry. I only sipped water for 3 days while in the hospital,( esophageal spasms made drinking painful) so not the protein mixes, or any foods. Now there are painful bumps all along the edge of my tongue, had them for about 3 months.
A month ago, my bladder was so painful, with decreased flow and less output in-spite of drinking over 64 oz fluid a day. I was seen by my hospital based PCP who immediately sent me to the hospital urologist,his tests were inconclusive. He sent me on to a urology nurse coach to figure it all out. She wanted me to do an elimination diet, thinking a food was irritating my system. All the foods on her irritation list have been my diet for ever, and current diet too. How could I eliminate everything?
Not wanting to totally change my D.S. diet, I thought an allergist could pinpoint the cause of the irritation. The skin test didn't reveal all, an elimination diet is best to add to the info we gained from the skin test. He said if I don't get relief from eliminating my past diet, then it would be a medical problem. I have had immediate improvement after 1/2 a day without all D.S. supplements and shakes. To isolate the ingredient responsible for my symptoms will be almost impossible he said, since each product has so many ingredients. You have to be a good detective and analyze each food, and drink mix, and things like chewy calcium, and chewy iron/C . My PCP said once my tongue is irritated, everything will bother it.
The allergist chose the chicken and green beans from the results of my skin test. Everyone would have different foods depending on their allergy test results. Animal protein was the least reactive. I'm happy to be able to have real protein for my D.S. requirements!!! Milk is suspect, as a child couldn't have any dairy without extreme abdominal pain. Grew out of it a bit, but I bet a lot of products today don't have the same pure milk/cream content they used to have. 1/2 & 1/2 is painful for me now, can't use it.
My nutritionist suggested trying soy protein shake mixes, to see if its the whey causing my issues. going to try it soon. The health food store, and the Vitamin Shop had a few soy shake options to choose from. GNC has some too, I found on line searching last night. The Vitamin Shop will let me return the ones I try if they won't work for me. I should have bought all my shake mixes from them, I have lots I probably won't be able to use, or return. I heard I can give them to a food donation shelter, or my surgeons office will be able to give them to patients who need assistance with supplies.

Sandra...OY, that first paragraph alone. No fun. However, gotta love the side benefit of busting a stall!
Thanks for sharing the details. I hope you get this sorted sooner rather than later. I've been looking to the Vitamin Shoppe too for more variety, and that's good to know about their return policy. Soy protein is fairly easy to find, as soy became more 'mainstream'. I know Trader Joe's carries one too, if you're close to one.

Ah, the midwest is so wonderful, I miss it, but yes, you would definitely miss Pasadena, which is such a great city. Well, yanno, it's always nice to have friends in all kinds of places, easy to ship anything if you're craving it, I've done it before :-) I will check your allergy post, was gonna say that info would be great separately so people could respond. I unfortunately know bubkes about allergy elimination, but have had other friends go through it, it will be interesting to learn, hope you get some feedback.

I visit her from time to time. She shops at Whole foods, and can look for me. They may have Soy shake mix too. All my post surgery issues are learning experiences!!!! I am keeping a positive attitude, good things have come out of all this. I have a few new docs to add to my list, and now know exactly what my allergies are. Egg and shrimp are causing my swelling legs , face and hands. Breathing can be affected too.

I just had a couple of the almond crusted chicken tenders with ranch for dipping. I think I gotta get some bleu cheese, I have always loved ranch too, but all I taste is the sugar! Crazy pot-op tastebuds. Maybe need to make my own. I have to take a drive soon so I'll knock back some water and calcium then.

Well, I was able to last an hour and a half at the birthday gathering. My mini ricotta-spinach tartlets turned out great, thanks Giada at Home show I ate the insides of a couple of them, got teeny bits of the pastry. Ate a plate of fancy cheeses. Came home and had a piece of chicken kielbasa sausage with mustard. Today I will stop by a Superbowl party; I'm making mini individual crustless quiche out of the rest of the ricotta-spinach batter (which also has feta, paremesan, cheddar, bit of sour cream, sauteed fresh spinach in butter, salt, pepper, lemon zest) This way I can eat them too Also making a bread pudding out of the leftover sweet potato cornbread and pumpkin breads I stuck in the freezer. Just had GO Lean Kashi Crunch with almond milk and 4 sausage links with maple syrup. Will have my 2 protein shakes, some of the almond crusted chicken tenders, and if I don't do something with that steak and peanut sauce today, I'll have to toss it. Will probably have another hunk of chicken kielbasa sausage, it is soooo good.
