So, how is everyone on Monday, and apparently Tuesday since new posters are coming here instead of the Tuesday thread :-) All good!
I'm thinking...about how much I think about eating and what food I will be eating. Almost non-stop. The joys of the early post-op time, but then, I know this will go away, my insides will eventually acclimate, and so, I plan to if not exactly enjoy this honeymoon :-) focus more on appreciating the gift, knowing it will work itself out. Committed to getting in more animal protein because I know that's best for my body, stimulates weight loss and management. Just hard right now because a little goes a long way.
That said - I made a delish snack last night - Pizza-style tostada 1/2 lo-carb/good protein/fiber tortilla, pepperoni slices, mozarella cheese. Heated the skillet with canola oil, and on a low heat, laid down the tortilla, immediately covered with layer of cheese, layer of pepperoni, another layer of cheese; after the bottom started to melt, I covered so the top would too. Added oregano, flaked peppers and parmesean cheese. Delish!
Today, an alternative to bacon for breakfast.
Meal 1 - protein shake
Meal 2 - 4 Trader Joes turkey meatballs, 1 over easy egg; melted a little extra butter over the meatballs when I nuked them, cooked the egg in butter. Had a dab of sf strawberry preserves on the side. 31g protein total.
This gives me 76g protein in 2 meals already, working my way up to 120g for the day.
Will finish off the mistake buffalo chicken drumsticks and try some of the braised ribeye marinated in balsamic and a little wine (alcohol cooks out) Hoping to work in a little veg, like spinach (for more iron!) and the yummy bruschetta relish - tomatoes, basil, onion, artichoke.

Not a DSer, but I always check out the eating threads as I love to cook (unless I'm pmsing, then gimme some Indian or Thai carryout please.)
Tonight it's pheasant piccata with shallots, garlic, and capers. Last night it was quail poppers (quail breast wrapped around slivers of jalapeno, pepper jack cheese and bundled in a slice of bacon.. cooked under the broiler.) Thought the bag of game birds was leftover parted out turkey.. was going to make turkey chili till I realized what the bag actually contained.

I just finished some beef fajita meat with sour cream for lunch. I'll probably make chicken chili for dinner since I have to cook it today.
I bought the Atkins baking mix today though. $12.99!. Wtf! I am intrigued by it though... I was too lazy to make the 3 carb pancakes.. maybe tomorrow... Like most carb-controlled products (for me anyways), I am expecting it to suck.

I just finished some beef fajita meat with sour cream for lunch. I'll probably make chicken chili for dinner since I have to cook it today. I bought the Atkins baking mix today though. $12.99!. Wtf! I am intrigued by it though... I was too lazy to make the 3 carb pancakes.. maybe tomorrow... Like most carb-controlled products (for me anyways), I am expecting it to suck. I am rally curious about the baking mix.. I haven't ventured into any of that stuff.. so would you consider posting a topic when you do try it, so I know how bad it sucks?

Hi Jo, more the merrier, welcome! Please stick around, I'm a foodie too, I love talking about all this :-) And you're cooking pheasant piccata? Quail poppers??!! MIGHTY impressive! I'm with you on the Thai and Indian take out too, I live in LA, and surrounded by great ethnic dives of all kinds.
Terilynne - Yum, fajitas! I just haven't tried vegetables yet, a little gunshy but want to try spinach today. I can't imagine having the fajitas with out yummy red/yellow peppers and onion, so I'll wait a little longer. You'll definitely have to update when you give the mix a try. Gluten free baking has come a long way, so there are many other options now, if you're really into it. I mean, hey, a chick who just won Cupcake Wars (how much time DO I have to watch Food Network, TONS!) If you'd like some ideas, let me/us know. I do think Atkins products are pretty decent tasting, though super pricey. Curious to hear your feedback.

Not sure about impressive, but def had to adapt fast (means, went to google and looked for something relatively easy!) It was either cook them quick or pitch them, and I can't waste good meat, especially free good meat that DH's co-worker gave to him.. plus where's my sense of adventure if I did that? lol.. Her husband hunts, she passes along over-stock from their freezer to ours for the donation of a couple bottles of vodka once in a while.. We have tons of ground venison (love it) and the bag of birdies was just an unlabeled defrosting surprise.. I will do the poppers again, using deboned chicken thighs or even pounded breasts.. very easy. Soak in soy sauce/garlic/whatever you like for 20mins or so, and stuff, wrap in half-cooked bacon, toothpick and broil or grill till bacon is crisp.. yum.

Stromboli for dinner tonight; lots of yummy italian lunchmeat and oozy gooey cheese inside a pizza crust, dipped in marinara sauce. I usually eat out the insides and maybe have part of the crust (I'm almost 3 years out)

Just a word of caution about spinach as your first veggie!! I could not tolerate spinach at all for about two YEARS after surgery. I have no idea why, but it always gave me a stomachache and sometimes still does. Of course, every single one of us has different intolerances, but I've never had any trouble with asparagus or squash. Lunch today was leftovers from the ham and cream cheese quiche I made yesterday (see the recipes section) and tonight will be whatever I can scrounge in the 15 minutes I have between work and rehearsal. Probably a protein shake. I'm having a blast in Cabaret, but I'll be glad when life gets back to some sort of routine!

Ooooh, stromboli sounds soooo good, I'm afraid I couldn't ditch the crust, sooo my weakness. I'm trying to be good now while I'm in the early window. But later on, later on....!!!
Anna, hmmm, I might try a quiche, I'm not always doing so well with omlettes right now, and I so love eggs. Did ok with the over easy and hard boiled. But I miss that yummy mix of ham, cheese and eggs. I've been staying away from vegetables so far, but oy, spinach is my favorite, has been my go-to for years, I will be so sad if I can't tolerate it any more. I've heard this from others too about spinach. I'm going to use a small amount, going to saute it with peanut sauce I'm making for my beef, and see what happens. Not sure if the tomato acid will agree or not, I did ok with soup. Well, I don't have to go anywhere today, only steps from the bathroom :-) I'm definitely needing to break up some of this protein.
Are you a performer/actor then? I have a quickie on the go food suggestion that keeps, do you eat lo-carb tortillas? If so, wraps are a great way to have a filling, protein and fiber snack, fast to make, you can make ahead, keep 'em simple, and you get some real food instead of just protein bars and shakes. Wrap them in foil and they will keep, even if not refrigerated. Different deli meats, cheeses, mustard, mayo, cream cheese. You could do turkey, bacon and cheese with mayo; turkey, cheese, cream cheese and cranberry spread; ham and cheese with mustard; italian style with salamis, pepperoni, provolone and a little italian dressing or mustard/mayo less messy.

Pre-breakfast & breakfast, the usual: Premier shake first thing, then a couple cups of coffee, then my actual breakfast: 1/2 C cottage cheese, couple spoons greek yogurt, 1/2 c blueberries, SF Hazelnut syrup, spoon of Carlson's Lemon Flavored Fish Oil. I make these up 7-8 at a time, and just grab them when going to work or even like today, when working from home.
Lunch will be either a sausage-n-onion-n-pepper thing I made up a few days ago, or crockpot apricot chicken thing I made last nite.
Dinner, probably chicken taco with some leftover rotisserie chicken, avocado, homemade salsa I have in the fridge....
I LOVE to cook, and read recipes like normal people read fiction. I was thinking the other day (after coming back from Costco with tons of food!) that I seem to have even MORE food on hand these days than I did pre-surgery. Like it's a comfort or something.... I obsess over food just as much as i did before surgery, only now it's all VSG-friendly stuff. Works for me!

Sharyl, Definitely try some quiche. It was one of my go-to foods early post op and I dont really like eggs. Just eat it without the crust. There are a lot of crustless recipes for it online. hmmm.. might have to make one soon!

Well girrrrl, color me impressed! Game meat is so french! I remember my first experiences with it in Paris. I think you turned it out (to quote my favorite drag queens). And poppers without breading and deep-fried! Werk! Right?! I LOVE to cook too, total complete foodie, love the Food Network, love reading cooking magazines :-) I so see me going down the more obsessed route, all these new things to play with now! Terilynne, ya, I think it's the frying that isn't work for me, not sure why but oh well! And I would yes, rather bake it then, I'm going to look into some recipes and breakfast casseroles. Betty - Apple bacon smoked pork, the trifecta! Ok, I'm going to visit some bargain shops, hitting Ross and my favorite Salvation Army, I always score great household stuff and I might just treat myself to something fetching to wear as a reward

Didn't feel like cooking today. We used a gift card I got from Christmas and went to Outback. They have a really good combo on special. It was a 6oz serloin with 3 grilled shrimp and 2 scallops. I got the brocolli instead of the loaded potato. So good, and just the perfect size. My son helped me finish the brocolli and my daughter helped me finish the steak.

Meredith, wise move on using the gift card (I LOVE gift cards) why not, you deserve a break today! I also really love steak houses, all kinds - Outback, fancy, kitchy old school. And they are so our kind of menu. One of my all time favorite meals is a nice steak, caesar salad...and a martini with lots of olives :-) Probably will be awhile for the salad and the martini, but good reminder of a restaurant option.

Well, let's see....
Breakfast, we had 2 eggs over easy with one piece of toast/loads of butter.
Lunch, we had crackers made from melted cheddar with cheddar, balogna, cheddar, pickle slice (can you tell I like cheddar?)
Dinner, we had smoked Beef sausage on bacon fried cabbage. Lots of bacon.
Snack was a double chocolate/razzberry protein shake. Also a very large homegrown red grapefruit, super sweet.
Probably still something before the night is over.

I just moved into my own apartment last weekend so I've been cooking more for myself. Today I put 5 chicken breasts in my crock pot with a jar of salsa, taco seasoning, and lipton onion soup mix. I let it cook for 7 hours and then I shredded the chicken so that I can have a taco salad like meal. I have greek yogurt instead of sour cream, cheese, black beans, and fresh guacamole. I have a friend coming over for dinner.

Inge - I like making cheese 'crackers' too from melting cheese. If I ever can eat tuna salad again, I know that will be a great combo.

Superhsae - Congrats on your new place! That crockpot chicken sounds great, which reminds me, I got sidetracked buying some decorative/needed house stuff and forgot to order a crockpot, on it now!
My house right now smells like bacon, because I baked a package of it in the oven. I like eating it this way better, and also do better with low-sodium bacon. I'm going to make a crustless bacon and cheese quiche, found a simple recipe on Allrecipes.com that's basically eggs, bacon, shredded cheese, onion; calls for mushroom and tomato, but I'm skipping those for now. Suggested sour cream instead of milk or heavy cream, which I think is intriguing so I'll get more fat in with that and the butter I saute the onions in. I always keep a stash of foil baking pans (thanks 99cent Store!), so I have pie tins.
I bought chicken wings to make, flap steak, and have ground turkey I still haven't cooked yet- can't decide between chili or taco salad fixin.
Today:
Meal 1 - Protein shake; doing one every morning now first, since I'm working on getting in 120g of protein.
Meal 2 - several bacon strips, hard boiled egg, protein quesedilla (1/2 lo-carb tortilla, lots of cheese, fried in canola oil, salsa)
Meal 3 - Power Crunch bar; and will make myself finish up my last two mistake buffalo chicken drumsticks
Meal 4 - I lost my taste for the braised ribeye, put it in the freezer; going to pan fry a sirloin steak in butter instead, with onions, tiny spinach, I want to still try the spinach
Meal 5 - protein shake
***been snacking on soy-flaxseed tortilla chips with hummus, cheese; I get in fiber, protein and fat; a full serving of chips (7) is 9g protein, 18g fiber carb, and I rarely eat a full serving.

LOL But I've been running crazy getting ready for the show! Yes, I do community theatre. And thanks for the ideas but no, I don't tolerate tortillas of any kind very well. And I don't really care for the low-carb ones I've tried anyway. I'd rather just use slices of ham for the outside of a rollup.
