I thought I'd combine the weekend into one post. So I screwed up the chicken, DUH, I need to pan fry them first to get the skin crisp. So I have roasted buffalo chicken drumsticks instead. Not the worst, but not fabulous, might reconsitute the chicken into a chili instead, and have another go at the drumsticks with the rest I have in the freezer.
I picked up some bruschetta, cheeses, hummus, get some variety in my snacks. At Trader Joes the food sample station did whippet thin flat bread pizzas with bruschetta, arrugula, cheese and it was sooo good. Not feeling food right now, but this is the gameplan:
Meal 1 - cashews, protein shake (already got this down) Meal 2 - wrap - 1/2 lo carb tortilla, turkey, provolone cheese with cream cheese and sugar free strawberry preserves for spread Meal 3 - probably the buffalo chicken with some spinach and feta Meal 4 - protein shake Meal 5 - we'll have to see how that goes, I have the balsamic-wine marinated rib eye or turkey meatballs

I'm doing some cooking to try out some new things, I'm finally getting a tiny bit bored :-) Though my interest in food right now remains low and I will take it!
Right now, brining chicken drumsticks in apple cider, and I'm going to make them buffalo-style with bbq and Frank's hot sauces. I figured that will be better protein bang for the buck than wings and I like those, not a fan of eating thigh meat unless it's in something. Also braising eye of the round steak pieces in balsamic-wine. I'm going to sear them and make a peanut sauce to eat them thai-style.
Meal 1 - amazed myself and had a 1-egg cheese omlette and 5 strips of lo-sodium bacon with sugar free maple syrup, 1/2 lo carb torilla with butter
Meal 2 - Go Lean Kashi Crunch Meal 3 - will be a protein shake
Rest of meals will be the buffalo chicken, will snack on cashews and provolone cheese.
Any special plans for the weekend, dining-social challenges, cooking/entertaining?

Let's see:
Protein Shake cup of coffee at home slice of provolone cheese half coffee cake from starbucks venti breve skinny mocha 16 oz water 6" tuna subway sub--hallowed out bread, shredded cheese, mayo, oil and veggies (YUMMY) diet mtn dew handful of honey roasted peanuts handful of pretzel crisps dinner?

I'll be eating Dreamfields mac and cheese with buffalo wings with blue cheese for dinner Mac 'n cheese...*WANTS* :-) But, I'll have buffalo drumsticks with full fat ranch and feta, woohoo! I forgot to pick up bleu cheese dressing which I luuuuv. Ah, the hallow out the bread is a good trick, you get all the yummy taste and so much less of the calories/carbs, I love doing that.

Not been a good day, could not get a snack in this morning which make tummy upset which makes for bad rest of day.
Tonight BBQ chicken packets In a piece of aluminum foil add a chicken breast, sprinkle with onions, 1 -2 tbls of BBQ sauce and frozen corn. Wrap up place in 400 degree oven for 20 mins. Super quick and no clean up.

Betty, that bbq chicken packet sounds great, easy, fast and can take it with me on the go.
As of right now, I'm going to have to make myself eat, but it's still early morning, that could change...

I had some left-over italian chicken for breakfast, 3 gyoza for a snack, some ham for lunch, and will be having steak/mushroom omlettes for dinner. (Ha! I have my meals backwards...should've had the omlette for breakfast, chicken for dinner).
Tomorrow we'll be making EN's hunk o' critter.

Beth - I love eating backward, I can't tell you how many times I've had omlettes or oatmeal for dinner. I don't see that changing with my DS either. :-)
Right now I'm having some handfuls of cashews, they agree with me and a good way for me to get some fat in, so happy.
I haven't had a burger yet, but I feel one coming down the pike. I go back and forth between not feeling like cooking, interested in food, to wanting to try out recipes. I've learned not to make too much of anything for now.

Mac and cheese sounds so good.
Cheeseburger with onions, no bun for dinner. I better go cook that before it gets too much later.
Ham and cheese omlette for breakfast tomorrow.

My mom made stuff for tacos last night. I had some shredded chicken with some cheese melted in and some beans with it for lunch. For dinner I went to a wedding and had some baked beans and meatballs. They were good and my stomach agreed with them.

Mmmmm, taco filling sounds good! I was just thinking yesterday that one of the fats I'm WAY excited about is guacamole :-) I'm thinking I might pick up an order from one of my fave dives here, and make up some turkey taco meat, I have all the rest of the fixins on hand - taco seasoning, plenty of cheeses, sour cream. I don't mind at all eating this without taco shells/chips or tortillas. Makes me think about fajitas too, mexican stir fry, same, just the meat and vegetables, yum!
Today - Meal 1 - 1/2 lo carb tortilla, 1 tbs peanutbutter, small smear of sf strawberry preserves
Meal 2 - the DS crowd pleaser - plate of (lo-sodium) bacon, with sf maple syrup
Meal 3 - protein shake
Trying to be a lil careful right now since I might go to a movie today and I don't want to have to bolt to the ladies room :-) If I go will bring a canned Pure Protein shake with me or a protein bar.
Also made a new ribeye beef, that I want to eat asian style, I'm going to make a peanut sauce to dip it in.

Last night I went to a Chinese New Year banquet at Shanghai Jazz. The set menu included potstickers, shrimp & pork dumplings (can't eat, I'm allergic), veggie dumplings, and then a boatload of food including Prosperity fish, braised beef, longevity noodles, and Precious chicken.
I've been trying to stay gluten-free so I avoided the dumpling/potsticker bit, and I ignored the noodles. I did pretty well, no reactions.
Tonight we're having cod and risotto. A friend is coming over to cook with me, and I can't wait! He's a wonderful chef, and his food is always a treat.
I need more protein now, though, so I guess I'll grab a shake.

Baileymouse - girrrl, you done good, and that list of chinese food literally makes me salivate. I do love pot stickers and dumplings, but those won't be on my menu any time in the near or near-distant future! I missed the Chinese festivities this year, I'm still not feeling that great energy, food, stomach wise, but there's always next year.
A friend who is a chef coming over to cook cod and risotto?! Ooooh, that sounds divine, you have so share what the menu is later. I actually like having my protein shakes too for the boosts so I don't overstress about eating protein.

We made King Crab for dinner. With lots of melted butter. Found it on clearance at Aldi for $10/pound cause it was a special item they don't normally carry and were making room in the freezer for the next weekly special. I love that store.

I used to go to one when I lived in Chicago, but we don't have them here. However, we do have something called the Food King, which is an epic experience in shopping :-) Never a time of day the place isn't jam packed because of the bargains. When I can actually eat more than a half-cup of food I'll go back there.
