Should we be shooting for? I know we need not worry about eating fat like we did pre-DS but I also don't want to turn into a huge komodo dragon with a nether-region that needs to be doused in olive oil every time I need access....is there a number we should be shooting for?

In 9 years I have never counted fat grams.

Well, you could think of it this way, just using the malabsorption rates (and it's very much YMMV): A standard normal diet is frequently shown to have somewhere around 30 grams of fat per day. With DS math, in order to absorb 30 grams of fat, you need to CONSUME at least 150 grams of fat....which is the equivalent of a stick and a half of butter.
That being said, I've never counted a gram of fat since my DS.

I have not idea how fat I eat cause I don't count. I do add butter to alot of my food and no longer eat low fat anything. If you are concerned, you could try tracking your food on a calorie counter site and then track how much seems to work best for you. I have used myfitnesspal a few times to track how much protein I was getting in a day. I found it to be a pain to remember everything I ate for the day and don't really use it anymore.

I dont count them either. If things are slowing down in the BM department, I make myself a breve latte - a latte made with a full dose of cream. That's enough to work for me.
I dont go out of my way to either add, or avoid, fat. I eat what I like. Lucky for me that includes lots of butter, cheese, and nuts.

I use myfitnesspal for keeping track of protein +carbs and of course it tracks fat too. I am about 100-130 on the fat grams. I make no effort to get fat in though- i just aim for protein and no carbs.

I do not count fat either. I just eat what tastes good and it seems to work out well.
