Bearmom, you are always welcome here! We shall bounce anyone who says otherwise!! I used to use the So Delicious Coconut milk until they stopped carrying it at a convenient store, and then switch to almond, but this mix is DELIGTHFUL!! Coconut is also antiviral! I used to have some guinea pigs that because of poor breeding (thank YOU back yard breeders!!) had horrible tendencies towards fungus and not even rx stuff would help the pigs (and it also screwed with their already really too sensitive guts) and smathering them in coconut oil was the ONLY thing that got rid of that fungus!! I also cook my popeye pies in coconut oil and it adds a taste and crunch that is deeliciousss!!! Edit to add - I buy my coconut oil by the 1 gallon container from netrition - thank goodness for the 5 dollar flat fee shipping! Yum, coconut curry sauce!! M4J!! RIGHT ON FOR YOU AND GOAL!! And its not *really* dairy! :} But I hope that if you can find it, that you will enjoy it!! Edit again to add pictures of my beautiful and gentle, but genetically screwed boypig Taj. Not so equal time for his BoarNannyBestFriend, Dash. :} Also a nice boy, but Taj was something else. /gushing about guinea pigs past Oh, those are such cute pigs! I shouldn't admit this, but my partner often get fungal issues on his feet, and I make him use coconut oil on them when he does, which seems to stop the problems. I go to the same gym, but have NEVER had any type of fungus like athletes foot or toenail fungal grossness, but have always used the coconut oil on my feet just because skin is dry, and I'm certain that is why I haven't had problems from the gym showers.

Sorry if I landed on the sleeve forum, but I hit "new posts" and saw this topic and HAD to read. I'm going to have to find this. I've been on a coconut milk binge, but this sounds yummier. I have to put a little PSA in here about coconut milk and oil - and no, I don't sell coconuts, just know we've been misinformed for decades, and I'm tired of living in fear of fats, when some are so healthy. For those that are frightened about the tropical fats thinking they are bad, we have been misinformed about them. The reports that had had us believing the fat in coconut oil and milk were bad, were based on very old studies that that used HYDROGENATED coconut oil, and the hydrogenating process ruins any oil - nastiness. It is actually a medium chain fatty acid, and is GOOD for you. Not only that, but they are finding it has properties, similar to honey, like anti-microbial, anti-fungal, anti-bacterial. Sorry to be such a blabberer in your post (gosh, on your board too) but I just love what adding this milk and oil has done for my cooking and health. Thank you for the heads up on this product, since I think this may give a yummy new twist on my coconut curry sauce. Hey Bearmom, I find myself posting everywhere.. no worries! Ditto this! I have been using "virgin" coconut oil, and deodorized coconut oil for years.. it's a good fat! Plus this nifty bit of info.. saturated fats like beef fat have no scientific link to cardiac disease.. period. No proof. Fat is not the devil, never was.. however more and more they are starting to realize carb overload is the devil, go fig. How does almond milk do for protein shakes? My latest thing, since I'm doing fruit again, is milk, a scoop o' vanilla protein and a half cup of frozen {insert your favorite berry here}. Would almond milk work for that?

Thanks for pig compliments! I dont have any more and my rodent days are through. I loved them and enjoyed them so much, but the hay was hell on my lungs, and worst of all, while I had a pig that lived 9 years, they typically have such tiny life spans. Its hell on a heart. :{ Boo.
M4J ANY is good for shakes! I use it for my shakes, for coffee, for cooking "creamy" soups. I always get unsweetened so they can go sweet or savory.
ALSO with the almond coconut milk, its only 45 calories per cup, but you could even 1/2 cup it and 1/2 cup water and it would still be good!

Can you tell me how you serve havarti cheese baby with ginger root? Do you just grate some on top of the baby? And do you use fresh baby, or the frozen kind. They're running a twofer on havarti cheese babies at the store, so I could pick up some. Oh my goodness, I should not read in bed, just woke up sick hubby with my snorts. I love it

I have to make my own babies! What store sells them 2fer? *goggle!!* I found Havarti babies 2fer at Krogers, but they were the imported babies from foreign countries - the kind you can get real cheap. If you want locally grown babies, you still have to pay full price for those. Post # 49. Imma gettin there....

I have some heading this way, both vanilla & unflavored. I couldn't find it at the store, but I had a Netrition order going in and they had it!
I am looking forward to this, and if I had it tonight.. I'd be making some hot cocoa with the vanilla stuff and a couple spoons of dark choc unsweetened cocoa powder and a little splenda or some syrup stuff. I love the stats on it!

OK, I roasted the Farmers Market veggies today and ate some. Here is my analysis of the finished product: I cut one of the bigass purple carrots into slices, and dammed if it wasn't purple about 1/4 inch into the ring, and the inside part was white. So the jury is still out on my purple bottom. I sliced up two candy striped beets, and they looked just like the beet picture you posted up there. Very pretty, but ended up tasting just like regular beets. I also sliced some regular orange carrots, and some butternut squash cubes. I halved a few of the brussel sprouts, which were the size of tennis balls. Drizzled everything with EVOO, sliced a half a stick of butter, and sprinkled pink Himalayan sea salt and fresh ground pepper. Tossed and roasted in a dutch oven for a couple hours. The beets tasted like, well, beets. But they were good. The purple carrots tasted like some generic *root* vegetable, not as "carroty" as I expected. The butternut squash was just like it usually is. My favorite was the brussel sprouts - very fresh and *green* tasting, if that makes sense. This is my 44th post.... So...thumbs up to the fresh, local produce at Farmers Market, and it's always fun trying new foods. Any suggestions for the fresh ginger root or the celery root? I love roasted veggies!! Have you had cauliflower. That is one of my favs.

That sounds really good. I wonder if they have it at Trader Joes. That's where I get the unsweetened vanilla almond milk. I bet it is really good in cocoa and coffee, along with some half and half.
