Blue Diamond now has an unsweetened Almond Coconut milk! I have used Blue Diamond Almond Milk since the beginning of my journey, liking the nutritional stats and the flavor. But the almond coconut has a richer mouth feel, with 5 more calories but not more carbs (2) ! Its not helpful for adding extra protein, like the skim milk can be, but hell, I would rather "spend" carb calories on CarbOriffic things than milk! Anyway, Blue Diamond unsweetened Almond Coconut milk - deeelish! HAHAHHAHAHHAHA. I exalt you for the shout out. and ironically, I love coconut milk in Thai curries, just not actual coconut. Maybe it's a texture thing. oh, and beets go in that casserole too. I was reminded of my hatred of them last night as my friend was eating a beet salad and I was trying not to gag.

THANK you for the heads up on the Unsweetened Almond Coconut version. Our grocery stores here tend to be a bit slow on new products, but I'll be heading to WholeFoods this weekend to pick some up. Can't wait.

I used to not like beets either, until I had them fresh, smothered in lemon butter curry! Then I could taste something other than dirt. Probably I just liked it because of lemon butter curry! :}
Muwah Jackie! If you *like* creaminess, then you might like this better. I know some folks really dont dig the "full fat" milk taste, but, from the girl who could down some heavy cream - I am saying YUMZ!!

Brandi, Im in Florida - we don't have Kroegers or Fred Myers here [gawd, I miss FM's!] More of a Publix and WinnDixie kinda state. LOL, however, your post excited me so much I called our WinnDixie, which is so much closer to my house than Whole foods and they carry it!!!

They had something called Candy Striped beets, and I'm gonna be so disappointed in them if they aren't red and white striped in the middle. They also had huge, I mean HUGE purple carrots along with the regular orange carrots. I got some of them, but I have no idea how to cook them. I guess steam with butter like I do my regular carrots? Anyhoo, I'm pretty excited about new vegetables. Who knew? And also, this is my 43 post.....

I love almond mink and drink some every morning. I'm not sure about the addition of coconut though. I'll save trying it until my store is out of unsweetened almond. Thanks for the recommendation. Janis

OK, I roasted the Farmers Market veggies today and ate some. Here is my analysis of the finished product:
I cut one of the bigass purple carrots into slices, and dammed if it wasn't purple about 1/4 inch into the ring, and the inside part was white. So the jury is still out on my purple bottom.
I sliced up two candy striped beets, and they looked just like the beet picture you posted up there. Very pretty, but ended up tasting just like regular beets.
I also sliced some regular orange carrots, and some butternut squash cubes.
I halved a few of the brussel sprouts, which were the size of tennis balls.
Drizzled everything with EVOO, sliced a half a stick of butter, and sprinkled pink Himalayan sea salt and fresh ground pepper. Tossed and roasted in a dutch oven for a couple hours.
The beets tasted like, well, beets. But they were good. The purple carrots tasted like some generic *root* vegetable, not as "carroty" as I expected. The butternut squash was just like it usually is. My favorite was the brussel sprouts - very fresh and *green* tasting, if that makes sense. This is my 44th post....
So...thumbs up to the fresh, local produce at Farmers Market, and it's always fun trying new foods.
Any suggestions for the fresh ginger root or the celery root?

We mash celery root! And ginger root, look out! I freeze it and then when I need some of it in something I will whip it out and use my little fine hand grater.
Funny story about brussels - I put some in the steamer, went out to do something. Came home and smelled a house full of cat piss - FUMING! I was about to beat the crap out of EVERYONE and then realized, it was the brussels sprouts, not a cat piss party!
Phew! I was fumingly furious!
My favorite marinade for veggies/meats, I use it as a salad dressing, sandwich drizzle
1 cup = 1 serving
1/2 cup oil (original recipe olive, I use a zesty dipping oil that has Italian spices and hot pepper in it) 1/4 cup vinegar (OR calls for red wine, I use balsamic) 1/4 cup low sodium terriyaki or soy (I use Bragg's Aminos). Shitpot of smashed garlic.
I let vegs and meats sit in it overnight then cook however.
If you cook a bunch of veg down until it caramelizes, and then take a broth and put it in the pan and get up all of the left behind browned goop, that broth is crazy amazing, like a French onion soup broth. Yum!
My favorite thing with ginger?
HAVARTI CHEESE BABY! :}

Brandilynn! I just found this a couple of weeks ago and am in HEAVEN. It is the closest thing to 1/2 and 1/2 I've found for my coffee. I am afraid they'll take it off the market because I love it so much!!

I did the side by side mouth feel betwixt it and regular almond milk and the thickness brings me JOY! and INCREDIBLY so far, I havent had to pay any mental overhead for thoughts of just standing in the kitchen guzzling it! SCORE!

I'm going to have to find this. I've been on a coconut milk binge, but this sounds yummier.
I have to put a little PSA in here about coconut milk and oil - and no, I don't sell coconuts, just know we've been misinformed for decades, and I'm tired of living in fear of fats, when some are so healthy.
For those that are frightened about the tropical fats thinking they are bad, we have been misinformed about them. The reports that had had us believing the fat in coconut oil and milk were bad, were based on very old studies that that used HYDROGENATED coconut oil, and the hydrogenating process ruins any oil - nastiness. It is actually a medium chain fatty acid, and is GOOD for you. Not only that, but they are finding it has properties, similar to honey, like anti-microbial, anti-fungal, anti-bacterial.
Sorry to be such a blabberer in your post (gosh, on your board too) but I just love what adding this milk and oil has done for my cooking and health.
Thank you for the heads up on this product, since I think this may give a yummy new twist on my coconut curry sauce.

Bearmom, you are always welcome here! We shall bounce anyone who says otherwise!! I used to use the So Delicious Coconut milk until they stopped carrying it at a convenient store, and then switch to almond, but this mix is DELIGTHFUL!! Coconut is also antiviral! I used to have some guinea pigs that because of poor breeding (thank YOU back yard breeders!!) had horrible tendencies towards fungus and not even rx stuff would help the pigs (and it also screwed with their already really too sensitive guts) and smathering them in coconut oil was the ONLY thing that got rid of that fungus!! I also cook my popeye pies in coconut oil and it adds a taste and crunch that is deeliciousss!!! Edit to add - I buy my coconut oil by the 1 gallon container from netrition - thank goodness for the 5 dollar flat fee shipping! Yum, coconut curry sauce!! M4J!! RIGHT ON FOR YOU AND GOAL!! And its not *really* dairy! :} But I hope that if you can find it, that you will enjoy it!! Edit again to add pictures of my beautiful and gentle, but genetically screwed boypig Taj. They're running a twofer on havarti cheese babies at the store, so I could pick up some.

Usually I put havarti on Anna's GingerThins and that is how I have havarti and ginger! :}
I will have to devise a recipe for you! Oh! Do you know about my peanutbutterhavarti thing? I mix PNB (Naturally more is the PNB of my choice) with Hershy Special Dark Chocolate cocoa powder, and a sweetner, mash it up together and roll it in a slice of havarti - its HEAVEN. Better than any PNB evah!
BUT if you grated ginger in there too it would be amazing to the wonderful!
Thai food, you could make a ginger cashew chickeny thing! I will have to poke around! And yes, it was post 46! :}
