I need ideas, please. I'm 8 months out from surgery and doing well. Hope to have a nice Thanksgiving this year with a pleasant day afterward, as I have plans. So no traditional dressing. Love sweet potatoes, but that is still too many carbs for me at this point. I need some recipes/alternatives for all the usual "trimmings". We have some wonderful, creative chefs on this site, so I am looking forward to this discussion. Thanks!

Are you hosting? Are you looking to make dishes for everybody that you can also eat? You could make the "traditional" stuff for everybody and just not eat the stuff that bothers you...

I love to cook and I always do all the cooking at Thanksgiving. I would suggest, Turkey of course and a few colorful veggies such as broccoli, asparagus, cauliflower, just a little of each to make your plate look full and have variety. Not sure how well you can tolerate any of those? I am making a broccoli cauliflower casserole with a lot of cheese in it with a Parmesan crust and giant marinated and sauteed portabello mushrooms on each plate and asparagus with turkey of course.
BTW...I like your new picture, I think you look great, congratulations on your success!

Lovely. How about spaghetti squash? Roast it whole in a hot oven, when it cools enough scrape out the seeds and then remove the pulp. Add sautéed onions and garlic. Sprinkle with grated cheese and heat in the oven.

Ooooh, mouth waters from this thread, great ideas! Ok, here's a few from me: Butternut squash bechamel - includes cream, cheese, butter but lightened up with the butternut squash; you can thin it out and it becomes soup or use it as a sauce Greenbean casserole - make the sauce from scratch using nice long fresh greenbeans, sauce of cream, mushrooms, parmesean cheese, the canned crunchy onions are the perfect topping and low in carb; or if you have enough 'saucy' dishes, try the greenbeans amandine style instead - olive oil, soy sauce, bit of sweetener of your choice or honey, toasted almonds Or! GO for a stuffing but use low carb/gluten free bread. Like Ina's Mushroom and Leek bread pudding recipe, swap out the bread. You still use bread but use a lo-carb or gluten free version like Ezekiel, Udis, or the brown rice bread from Trader Joes or elsewhere that carries it if you don't have a TJ near you. I think the Ezekiel and brown rice bread would work best because they are heavier, more dense. Buy a loaf a few days in advance and let it sit out, or you can always toast it in whole slices in the oven, let it sit so it's harder/crunchier.

I am planning to make cranberry souse a week a head to let the flavors come out. With friesh cranberries, raspberry, one sectioned orange,you can flavor to taste as well with cinnamon, cardamon whatever you like. Butternut squash (roasted cubes in olive oil with you fav.spices) perscuitto appetizers. You can even stick a sliver of parm/origioano cheese under the meat for extra protein. Almond crust pumpkin cheese cake. Roasted Brussels sprouts tosted with herbs de provance and deranged with bolsamic. Green beans with alfrado souse and more cheese on top, of course have to put some crounchy onions on it. We will still have sweet potato roasted then mashed with loads of butter,cinnamon and nutmeg. Debating between smoking the turkey or roasting it lol. There is no way I will have room to even sample all, but its fun to cook for friends and family. Hope some of this helps. I will probably include couple Ukrainian salads as well ( I was born and raised in Ukraine) and my parents and brother will be coming to dinner. Still looking for more fun ideas to add.

Not to make light of it - because I know I obsessed at my first Thanksgiving dinner.
I think you can lighten up on the carb watch for one day. I cook the sweet potatoes for our family dinner and they won't go untasted by me. I also feel a slice of pie after is not out of the question. My mainstays though are the turkey and brussell sprouts so I have some room to work with.
We all have a lot to be thankful for - have a great day.

I agree. It's really okay to eat whatever you want on Thanksgiving. Nothing bad will happen.
It's a day to throw caution to the wind. Eat it all. The next day go back to your low carbing.

My forays into the carb world have been few and small, but I have paid BIG time the next day. I still have cramps and diarrhea if I eat simple carbs. If I didn't have plans for the day after Thanksgiving, I would probably give some good old fashioned dressing and pie a go. Since I do have plans, I think I'll go by the playbook so I can be up and about on Friday.

You're the best judge on timing. An early meal for me would be enough time to be past the worst of the repercussions on Friday but if you are doing early shopping I so understand. Nothing more irritating/embarassing than needing to go out and worried about where you are at with eating. Stick to protein and enjoy your Friday plans.

I am only cooking Turkey, mashed potatoes, stuffing and sweet potatoes. I am cutting back on the carbs and not making so many potatoes and stuffing. The sweet potatoes this year will be sweetened with sugar free butterscotch pudding and topped with pecans that will be cooked in butter and Splenda brown sugar (lots of butter). The rest of the meal with come from veggies. I love the idea of a gratin with cauliflower and broccoli, fresh green beans and zucchini from the garden this year.
No way am I making rolls and doing a lot of baking. This year I am focusing health. I worked to hard to get to this place.

Family doing Thanksgiving at our place. Group of 6 of us, and we all avoid wheat and gluten, so have no issue eliminating the stuffing and bread. As New York City people, we are going to prepare some items, and order some things from a local place (Hill Country BBQ, which a few New York DSers nibbled at together a while ago). Our menu so far:
Smoked Turkey with plenty of pan gravy! Sweet Potato Bourbon Mash (A little bit of sugar in it, but we'll deal!) Green Bean Casserole Homemade Cranberry Sauce made with Pure Via Cole Slaw Potato Latkes with sour cream Pickle and olive tray Cheesecake
Looking forward to DS friendly feasting!
