Ends up with my food sensitivities (all grains basically) and fiber being hard on my guts, giving up simple sugar easily put me WAY too low carb for my personal health issues I have some issues that make going into ketosis a bad idea, I have serious issues thinking and my moods become dangerously unstable (not keto flu, my dr said with my meds I should stay above ketosis for safety sake) I have to track what I eat because I actually keep dropping too low, I had sub 50g absorption way too often lately so I am adding a small amount of fruit blended in a smoothie and frozen in Popsicle trays to let me eat it slowly throughout the day. With an absorption of about 60% .... moderate carb intake for me means eating 200g of carbs, and no simple sugar. (120g absorption of complex carbs) Who knew that it could be so darn hard to keep that level when you dont eat candy? The strange thing is as long as I dont go over 225g I dont go crazy craving candy for the same reason I dont crave bread i have discovered that it causes serious inflammation and pain.
One question I have is does anyone else have serious issues if you go too low carb?

Starchy veg is going to be your friend, yeah? Not just potatoes, but stuff like yucca, plantain, winter squash. Can you do corn? South American cuisine, particularly Peruvian, does a LOT with starchy veg, and the food is delicious.

No corn or white potatoes, no rice, wheat and very little oats (lectin sensitive) I can eat squash, cauliflower, carrots, peppers, kolhorabi, jicama, and broccoli. I make up squash bake with cooked butternut or acorn squash, eggs and cheese and then portion it and freeze it so I can eat 1 a day Also I froze a smoothie with banana, blueberry, homemade cranberry and apricot puree into Popsicle trays, I froze the rest of the puree in mini muffin tons for later

What about trying some of the more unusual starchy veg, like plantain or yucca? And you could also try some non-white potatoes? I'm not thinking about sweet potatoes, since they're fairly high in fiber, but purple potatoes? Also, if your issue is that you need to increase your carbs -- and you can't do grains or most starches -- maybe you DO need to look at simple sugars.

Yummmmm... Jicama. Love it with cilantro and a bit of orange (juice, sections, zest). Maybe a bit of finely diced scallion, while you're at it. Sounds weird, but I like it.
