I never saw anything about soaking the bones. I take that back-one poster said to disregard that step. Do you know why it is done? I thought it was just to make the marrow come out clear or whiter.

Its's to leech out any blood that may be in the marrow, it helps get rid of that unpleasant iron-ish taste.

Have any of you seen the documentary Fat Head? He does it super size me style, but is in defense of eating healthy animal fats... He talks about how the theory of low fat diets to reduce cholesterol is hog wash. It was really interesting

Oh I saw that movie, and I thought it was great. I remember he was doing alot of eating out at the restaurants and what not but he was watching his carbs and keeping them to 50 or less a day. He kept food logs as well and showed them to the doc who was following him, and the doc couldnt believe how much better he was doing eating all that "junk".

I grew up spooning the "drippings" out of the roast pan after we cooked meat

bacon fat and lard should be staples in our kitchens. I save my bacon grease and keep it in the freezer. I use it to make pinto beans which then can be mashed with more bacon grease to make awesome refried beans.

Immediately after my DS, I was eating so much bacon that I was giving bacon grease as gifts! These days I eat a more varied diet---i.e., less bacon---so I pretty much use all the grease myself.
I made meatballs the other day, and I cooked them in bacon grease! Awesome.

I have a friend who is willing me her bacon fat surplus, she freezes it. I am so lucky.

If you really need your lard, then I will hook you up, EN and anyone else. It's winter, and lard ships well. The producer is irregular, however, with processing. Lard from the couple who raises hogs (their own) comes in four pound tubs. It's not some kinda anonymous feedlot lard. Like I said, I think I must have been their first person to request leaf lard from their hogs (again, veggies, avert eyes). I'm happy to serve as a conduit for a good fat source from an honest couple raising hogs. OOOOOOOOOO ME ME ME YES YES YES!!!!! *Snoopy dances* Find out a price for a couple pounds and I will be THRILLED.

I grew up on my Paw Paw's farm. We always had fresh everything including some good ole all natural Lard. Back in the day, that is all they used to bake with. They didn't eat all of that processed junk, and you didn't see obesity as an issue like you do now. My Mimi ate eggs and bacon every morning and lived to be almost 100.
Man, this post makes me miss those days of fresh milk, cream, butter, and eggs. I remember walking around the grounds with my Paw Paw. I would try and name the animals. He would say, "Don't name them sweetie because you may be eating them next week." LOL. I had never had a canned vegetable until I started school. My mom would do lots of canning and putting veggies up in the freezer so that we would have them year round. Yum, yum!!
My husband and I were in New Orleans last year and took a cooking class, and they used Lard there. They gave out hand-outs of all the benefits of using Lard and why it is better for you. Interesting. And, man those biscuits in that class were to die for. Flaky goodness.

Love your suggestions about the gift wrap. I had no idea! You can still have good produce, milk, meat, and eggs. Just takes a bit more looking, depending on where you are. An okay place to start is www.localharvest.org/That location can direct you to places that sell locally produced items, which are often produced with fewer chemicals and alterations than normal grocery store fare. Many times cheaper as well. Almost all of the time better tasting. (IMHO)
